Join Susan Herrmann Loomis and her colleague Hervé Lestage, oenologist and owner of La Feuille de Vigne in Honfleur, for five magic days around the apples and orchards of Normandy. During this exciting class we will delve deeply into the culinary world of Normandy and its apples, from sparkling hard cider to Pommeau and Grim de Poire, from sumptuous apple desserts to apples as condiment. And then there is Calvados, the unparalleled Norman elixir, to finish each meal. We will learn about and taste dozens of apple varieties, meet cider and Calvados makers, and take a very special trip to visit orchards and the people who run them.

At the end of August 1919, 29-year-old Sylvia Beach arrived in Paris, which had then been declared the center of experimental poetry and criticism by William Butler Yeats. She had come to read – specifically French poetry – and would stay, living out the rest of her life in Paris, enduring two world wars, opening a bookstore, nurturing French and American cultural relations, and dying at 76 in her apartment on the Left Bank. Unlike many of her fellow expatriates who came to Paris speaking no French and with no prior experience living abroad, Sylvia had already spent two years in the city from age fifteen to seventeen…for all the fascinating historical details, see the guide….
